Bowcha (棒茶) is a roasted stem tea that originated in Ishikawa Prefecture during the late Edo period. Traditionally, only tea leaves were picked, leaving behind many unused stems. To reduce waste, a tea merchant decided to roast the stems and discovered a highly aromatic and flavorful tea. The practice quickly gained popularity, and today, bowcha remains an important element of Ishikawa’s tea culture, enjoyed daily by locals.
Unlike standard bowcha, which uses sencha stems, this bowcha is crafted from matcha stems. These rare stems retain the delicate sweetness, umami, and refined aroma of high-grade matcha, making this tea an elegant and unique take on traditional bowcha.

Brewing Instructions
Hot Brew:
- Use 3–4g of tea per person for 150ml of hot water (90–95°C).
- Pour hot water into the teapot, cover, and steep for 90–120 seconds (shorter time for a lighter taste).
- Pour evenly into cups, making sure to extract every last drop for a well-balanced brew.
Bowcha can handle a second infusion, but the flavor will be lighter. Use the same tea leaves from the first brew. Pour slightly hotter water (around 95°C) over the leaves. Steep for 2–3 minutes to extract more sweetness and mild roasted notes.
Cold Brew:
- Use 7–8g of bowcha leaves.
- Add 150ml of hot water (90–95°C) for 2–3 minutes.
- Add 150ml of ice cubes or cold water and stir until chilled.
- Strain and enjoy.
Consume within 24–48 hours for the best flavor and freshness.
Storage
Store in a cool, dry place, away from odors and light.
