This ceremonial-grade matcha is made from first flush leaves cultivated in the Uji region of Kyoto, renowned for producing some of Japan’s finest teas. Ceremonial matcha is the highest quality matcha, traditionally used in Japanese tea ceremonies. It offers a smooth, umami-rich flavor with minimal bitterness, making it suitable even for koicha (thick tea).

The cultivation and production process is meticulous. The tea plants are grown under shade for several weeks before harvest, enhancing their theanine content and resulting in a naturally sweet, deep green flavor. Only the most tender young leaves are picked. These are then steamed, dried, and carefully separated from stems and veins. The resulting tencha leaves are finely stone-ground into a vibrant green powder.

Matcha’s signature taste comes from its balance of catechin (which gives astringency) and theanine (which adds sweetness and depth), producing a flavor profile that is both refreshing and savory.

Brewing Instructions (Usucha & Koicha)

Usucha (Thin Matcha):

  1. Sift 2g of matcha (1.5 chashaku or 1 tsp).
  2. Add 60ml of water at 80°C.
  3. Whisk briskly in a zigzag motion for 15 seconds until a light foam appears.

Koicha (Thick Matcha):

  1. Sift 4g of matcha.
  2. Add 30ml of water at 80°C.
  3. Mix slowly and firmly with a chasen, kneading into a smooth, thick texture without foam.

Storage

Store in an airtight container in a cool, dry place, away from light and odors. Keep refrigerated after opening to maintain maximum freshness.
